La Hacienda Rehabilitation and Healthcare Center will be a licensed 124 bed nursing facility located in Southwest Houston, TX. Our mission is to provide individualized medical rehabilitation and healthcare services in a warm and friendly environment designed to make everyone feel at home.
Qualifications:

Must complete a state agency approved 90 hour course in food service supervision,

Or has had training and experience in food service supervision and management in a military service equivalent and has had his/her training credentials evaluated and approved by the Nutrition Program Specialist Bureau of Long Term Care TDH
-
Associates/Arts graduate in nutrition and food management (dietary technician) or graduate of a Dietetic Technician or Dietetic Assistant training program approved by the American Dietetic Association or Dietary Manager’s Association whether approved by correspondence or in a classroom.
Position Summary:
Supervise the Dietary Services with regularly scheduled consultation from a qualified dietician. To provide nourishing food to residents, guests, and employees under sanitary conditions as directed and in accordance with established policies and procedures.
Essential Job Functions:

Participate in regular conference with the Administrator and with the RN who has responsibility for the resident and the resident’s plan of care.

Provide information about the approaches to identified nutritional problems.

Assist in development of dietetic policies and procedures,
-
Recommendations and assist in developing personnel policies,
-
Plan diets to be reviewed by consultant.

Purchasing or requisition food and supplies in appropriate quantities based upon the menus.

Maintain a file of standardized recipes adjusted to the proper yield.

Supervise food preparation and service.

Implement schedules for work and cleaning.
-
Maintain high sanitation standards.
-
Ensure proper maintenance of equipment in cooperation with the Administrator.

Control food and labor cost according to budget.
-
Participate in employee selection and termination.
-
Schedule Food Service employees to attend orientation and training programs.
-
Assist the Dietician in planning and conducting an in-service training program.

Maintain personnel records.
-
Visit residents and assist in gathering information on food preference and giving diet instructions.

Communicating appropriate information to other members of the health care team.

Follow up on recommendations from the dietician.

Diet roster

Nutrition assessments and care plans

Weekly staffing patterns

Employment of necessary personnel to provide adequate staffing

Monitor resident weights
-
Complete the nutritional assessment component of the MDS within 14 days of admission and update as needed.

Demonstrate a working knowledge of the Hazardous Waste and Product Rules, Blood Borne Pathogens Rule and Universal Precautions and ascertain that all employees who work under his/her supervision in dietary department receive the appropriate training in these rules and follow them in their daily work practice.

Other duties for department heads- manager of day, tours, grievances, dining room duty.
